Shrimp w/ Shiitake, Edamame and Tomato

List of Ingredients
- - No-stick cooking spray
1 pound (480 g) peeled and deveined fresh shrimp
3 ounces (90 g) shiitake mushrooms, stemmed and sliced (about 1 cup)
2 - shallots, finely chopped
1 tablespoon finely chopped garlic
2 - large vine-ripened tomatoes, seeded and diced
1 cup (6 oz/180 g) shelled edamame (frozen baby green soybeans), thawed
- - Sea salt to taste
- - Freshly ground black pepper to taste
Recipe
1 Spray a large sauté pan with cooking spray and set the pan over medium-high heat. When the pan is hot, add shrimp and sauté until just cooked, 3 to 4minutes. Transfer the shrimp to a bowl and keep warm.
2 Spray the pan once again and add the mushrooms. Cook, stirring, until the mushrooms begin to give off a little liquid and begin to soften, about 3 minutes. Add shallots and garlic and cook for 1 minute. Stir in tomatoes and edamame. Cook to thicken the sauce slightly, about 3 minutes. Season with salt and pepper.
3 Add the shrimp back to the pan and reheat for 1 minute. Serve with rice or over cooked spinach
