The dark, full-flavored black beans are a marked contrast to the delicate fish.
List of Ingredients
- - No-stick cooking spray
2 tablespoons chopped onion
1 15-ounce (450-g) can black beans, rinsed
1/2 cup (4 fl oz/120 ml) water
2 - ears fresh corn
4 - orange roughy, ocean perch or other mild white fish fillets, about 4 ounces (120 g) each
2 - vine-ripened tomatoes, seeded and diced
3 - limes, juiced
- - Tabasco or other hot sauce to taste
2 tablespoons chopped fresh cilantro, optional
Recipe
1 Spray a saucepan with cooking spray and place over medium heat. Add onions and cook, stirring, until softened, about 3 minutes. Add black beans and water. Lower the heat and simmer until thick and creamy, about 10 minutes, stirring occasionally and adding more water as needed.
2 Preheat oven to 450 degrees F (225 degrees C). Spray a baking dish with cooking spray.
3 If using fresh corn, cut the kernels from the corn cobs with a serrated knife. If using frozen corn, simply thaw.
4 Place fish fillets in the baking dish. Scatter the corn and tomatoes over the fillets. Pour lime juice and hot sauce on top. Cover the pan tightly with aluminum foil. Bake until the fish is no longer translucent in the center, about 15 minutes.
5 Spoon creamy black beans onto each of 4 dinner plates. Place a piece of fish and spoon some vegetables on top of the beans. Sprinkle with green onions and cilantro, if using.
