WHOLE FISH EMERIL STYLE

List of Ingredients
One (4 to 5 pound) fish, scaled, gills and fins removed, scored 1/8-inch deep
1/4 cup chopped garlic
1 cup extra-virgin olive oil
1 tablespoon red pepper flakes
Zest of 1 lemon
Zest of 1 lime
1 tablespoon cracked black pepper
1 cup chopped fresh herbs
1 cup dry white wine
1 cup sliced onions
2 tablespoons kosher salt
Recipe
Place the fish, along with all of the other ingredients except the salt, into a large plastic storage bag. Seal the bag and marinate for 24 hours in the refrigerator.
Preheat the oven to 350 degrees F and heat a grill to medium high
Remove the fish from the bag and sprinkle with the salt. Grill the fish for 5 minutes on each side.
Place on a cookie sheet and bake in the oven for twenty minutes. Serve on a large platter with extra-virgin olive oil and wedges of lemon
