2½ Cups Wholemeal Self-Raising Flour
½ Cup Castor Sugar
½ Tsp Cinnamon
135g Western Star Butter, melted
1 Egg, lightly beaten
1 Cup Buttermilk
2 Apples, peeled, cored and cut into small pieces
¼ Cup Sultanas or Currants
Recipe
Preheat the oven to 200C. Lightly grease and/or line a 12 Cup muffin tin.
Sift the flour, sugar, and cinnamon into a large bowl. Stir in the butter, egg and buttermilk. Add the apple and sultanas and mix lightly until the mixture is just combined.
Spoon the mixture evenly into the muffin tin and then place in the oven for 15-20 minutes or until a skewer comes out clean.
Serve warm or cold.
