    300g pie apple (unsweetened)
    1 cup wholemeal flour
    1 ½ cup self raising flour
    ½ teaspoon baking powder
    2 teaspoons ground cinnamon
    2/3 cup (125g) soft brown sugar
    1 1/3 cups (350 mls) skim milk
    2 eggs
    1 teaspoon vanilla essence
    150g (3/4 cup) olive oil
    ½ cup pecans, finely chopped

    Preheat oven to 200°C. Place 12 patty cases into a 12 hole muffin tin.

    Sift the flours, baking powder and cinnamon into a bowl and stir through the sugar. Whisk together the milk, eggs and vanilla and pour into a well in the centre of the flours.

    Add the olive oil and fold the mixture gently with a metal spoon until just combined. Add the pie apple and gently stir. (Do not over mix, the mixture should be lumpy).

    Fill each patty case three quarters full and sprinkle with chopped pecans. Bake for 20- 25 minutes or until golden and cooked through.
