    Apricot Peanut Butter Muffins

    List of Ingredients




    1 3/4 cups all-purpose flour

    2 1/2 teaspoons baking powder

    2 1/2 tablespoons sugar

    3/4 teaspoon salt

    1/4 cup Crisco Shortening

    1/4 cup Jif Creamy Peanut Butter

    2 eggs

    3/4 cup milk

    2 tablespoons Smucker’s Apricot Preserves

    Recipe



    Grease 10 large muffin cups.


    Combine flour, baking powder, sugar and salt; cut in Crisco Shortening and Jif Peanut Butter.


    Mix eggs and milk together and add all at once to dry ingredients. Stir only until dry ingredients are moistened.


    Fill muffin cups 2/3 full. Spoon about 1/2 teaspoon Smucker's Preserves in center of each muffin.


    Bake at 400 degrees F for 25 minutes or until done.
