    2½ cups (375g) self-raising flour
    ½ cup (110g) firmly packed brown sugar
    ½ cup (95g) dark chocolate chips
    1½ cups mashed banana (3 large, very ripe bananas)
    2/3 cup (160ml) buttermilk
    2 eggs
    1 teaspoon vanilla essence
    ½ cup (125ml) extra light olive oil

    Recipe



    Preheat oven to moderately hot 200°C or 180°C for fan forced. Grease a 12-hole (1/3 cup or 80ml) muffin pan.

    Sift flour and sugar into large bowl. Stir in chocolate chips and banana, then combined buttermilk, eggs, essence and oil.

    Divide mixture among holes of muffin pan. Bake in moderately hot oven about 20 minutes.
