    2 cups whole wheat flour
    2 tsp baking powder
    1 tsp baking soda
    3/4 tsp ground cinnamon
    3/4 tsp ground nutmeg
    1/3 cup maple syrup or honey
    1/3 cup skim milk
    2 egg whites
    2 cups grated carrots
    1/3 cup golden raisons

    Recipe



    1. Preheat to 350F
    2. Combine the flour, baking powder, baking soda, cinnamon, and nutmeg, and stir to mix well. Add the syrup or honey, skim milk, egg whites, and carrot, and stir just until the dry ingredients are moistened. Fold in the raisins or pecans.
    3. Coat muffin cups with nonstick cooking spray, and fill 3/4 full with the batter. Bake for 15 - 17min, or until a wooden toothpick inserted in the center of a muffin comes out clean.
