Chocolate Chip Muffins

1 Cup Self-Raising Flour
1 Cup Castor Sugar
3 Tbsp Cocoa Powder
1 Tsp Bicarbonate Soda
2 Eggs
½ Cup Water
90g Western Star Butter, melted
50g White Chocolate Chips
50g Dark Chocolate Chips
Recipe
Preheat the oven to 180C.
In a large mixing bowl, sift the flour, sugar, cocoa powder and bicarbonate soda. Add the eggs and water and give it a light beating.
Add the melted butter, and using a whisk, mix well until it’s a very smooth batter. Add in the chocolate chips and give another quick mix.
Pour evenly into 12 large muffin cases, sprinkling a few extra chocolate chips on top if you want.
Place in the oven for 10-15 minutes, or until a skewer comes out clean. Allow to cool in the tin and then on a wire rack.
You can ice the top of the muffins with melted chocolate, following the packet instructions, and decorate with lollies.
