    Cinnamon Raisin Apple Muffins

    Source of Recipe

    McCormick

    List of Ingredients

    1 1/2 cups all-purpose flour
    2/3 cup packed brown sugar
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon McCormick® Ground Cinnamon
    1/2 teaspoon McCormick® Ground Nutmeg
    1 egg
    1/2 cup milk
    1/3 cup vegetable oil
1/2 teaspoon McCormick® Pure Vanilla Extract
1 cup peeled and chopped Granny Smith apple, about 1 apple
    1/3 cup raisins
1/3 cup chopped pecans or walnuts

    Recipe

    1. Preheat oven to 400°F. Grease 12-cup muffin pan or line with paper baking cups; set aside.

    2. Blend together first 7 ingredients in a large bowl. In a small bowl, combine egg, milk, oil and vanilla extract; beat well. Add to flour mixture, stirring just until dry ingredients are moistened (batter will be slightly lumpy). Stir in apple, raisins and nuts.

    3. Fill muffin tins two-thirds full. Bake 20 to 25 minutes or until lightly browned on top. Remove from pan and allow to cool. Serve with Cinnamon Honey Butter, if desired. (See recipe for Cinnamon Honey Butter).
