    2 tablespoons butter or margarine
    2 tablespoons corn syrup or honey
    1 cup King Arthur Traditional Whole Wheat Flour
    2 cups baking bran (wheat or oat)
    2 teaspoons baking powder
    3/4 to 1 teaspoon mixed spices
    1 teaspoon baking soda
    1 cup milk
    1 egg
    1 cup OR MORE! chopped mix of dried fruits and nuts
    additional milk and/or applesauce or mashed banana for proper consistency

    Melt butter and syrup/honey together; reserve.

    Combine flour, bran, baking powder and spices in mixing bowl. Dissolve soda in milk, and beat in egg. Add wet to dry ingredients.

    Stir in honey mixture, fruit and nuts, then enough more liquid to make proper muffin batter consistency.

    Spoon batter into 12 VERY WELL GREASED muffin cups and bake at 375°F for 15 to 18 minutes.

    Note: We made our own changes to Lillian's recipe to suit our taste, as she suggested. Liking a sweeter muffin, we substituted 1/2 cup brown sugar for the 2 tablespoons syrup/honey; you could also use 1/2 cup of any other sweetener. We did as she suggested, using 2 cups whole wheat flour to 1 cup bran; but we also substituted whole wheat pastry flour for regular whole wheat flour, as we feel this results in a slightly more tender muffin. One-half cup of golden raisins and 1/2 cup of chopped walnuts were a pleasant fruit/nut combination; as Lillian says, feel free to experiment till you find a muffin that's particularly suited to your tastes. Chopped dates, chopped dried apricots, dried cranberries, flaked coconut, sunflower seeds and most kinds of nuts are all good additions to this hearty muffin.
