Oatmeal Muffins

2 large egg(s)
1 cup buttermilk
1/3 cup unsweetened applesauce
1 cup all-purpose flour
1 1/2 tsp baking soda
1/2 tsp table salt
3/4 cup packed light brown sugar
1 cup uncooked oatmeal
1/2 cup raisins
Recipe
Grease muffin cups on bottom only, or use paper muffin cups. Add together flour, baking soda, salt, brown sugar, oatmeal & raisins, & mix thoroughly on wax paper.
Break eggs into large mixing bowl & stir with fork. Stir in buttermilk & applesauce. Add dry ingredients to large mixing bowl & stir just til dry ingredients are moistened. Batter will be lumpy.
Fill muffin cups 1/2 - 3/4 full. Bake 18-25 min, depending on your oven, at 400F .
Yield: 16 muffins.
