Smoked Cheddar Muffins

List of Ingredients
• 1 cup all-purpose flour
• 1 cup yellow cornmeal
• 1/4 cup sugar
• 1 tablespoon baking powder
• 1/4 teaspoon salt
• 1/4 - 1/2 teaspoons ground red pepper
• 2 large eggs
• 1 cup milk
• 1/4 cup margarine or butter, melted
• 1 cup shredded smoked cheddar cheese (4 ounces)
• 1/4 - 1/2 cups desired toppings (such as sunflower seed, poppy seed, sesame seed, pine nuts, roasted sweet peppers, or additional cheese)
Recipe
1. In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper. In another bowl beat together eggs, milk, and melted margarine or butter. Add to flour mixture. Add the 1 cup shredded cheese and stir just until batter is smooth (do not overmix).
2. Spoon batter into greased muffin cups, filling cups almost full. Top with desired toppings. Bake in a 425 degree F oven for 12 to 15 minutes or until golden brown. Let cool in pan for 5 minutes. Remove from muffin cups and serve warm. Makes 12.
