    125g/4 1/2 oz softened butter
    115g/4 oz ground almonds
    200g/7 oz icing sugar, sifted
    1/2 teaspoon baking powder
    5 egg whites
    150 g/ 5 1/2 oz fresh strawberries, hulled and sliced

    Preheat oven to 180°/350°F/gas 4

    Melt the butter either in the microwave or in a glass bowl over a pan of boiling water, and set aside. Combine the ground almonds, icing sugar, flour and baking powder in a bowl and stir in the egg whites, followed by the butter. Fold two thirds of the strawberries into the mixture, then dived between muffin moulds. Poke the remaining strawberries into the top of each muffin.

    Bake in the oven for 15-20 minutes, and then allow to cool slightly before popping out the moulds.

    Delicious eaten warm or cold for breakfast or tea. Mmmm
