List of Ingredients
400g Dried Linguine
Salt
2 Red Chillies, seeded and finely chopped
Juice of 2 lemons
50ml Olive Oil
30g Western Star Butter
100g Parmesan, grated
1 Bunch Rocket, roughly torn
Freshly ground pepper
Recipe
In a large pot of boiling water, place the pasta and small sprinkling of salt, and cook for about 10 minutes, or until al dente. Drain the pasta, keeping 2 tablespoons of the water aside.
Return the pasta to the pot, and add the chillies, lemon juice, oil, butter, parmesan and reserved water. Toss the pasta until the cheese melts through. Add the torn rocket leaves and toss gently.
To serve, place in warm pasta bowls, season to taste with black pepper, and serve with a green salad
