Linguini with mushrooms

1 packet linguini
2 tablespoons olive oil
20g butter
1 large onion, finely diced
400g portabello mushrooms, sliced thinly
2 tablespoons thinly sliced sage
2 tablespoons Malmsey
½ cup parsley, coarsely chopped
½ cup chives, coarsely chopped
Salt and freshly ground black pepper, to taste
½ cup grated parmesan
½ cup cream, optional
1 egg yolk, optionalRecipe
Cook pasta in a large pot of boiling water for 8 minutes, drain and rinse with cold water.
Meanwhile, heat oil and butter together in a large frying pan. When hot add onions and cook 5 minutes or until softened. Add mushrooms and sage and cook until mushrooms have softened. Add Malmsey and bring to a boil; simmer 2 minutes.
Add remaining herbs, seasoning and drained pasta, serve with grated parmesan.
For a richer sauce add the cream and egg yolk after the Malmsey has reduced and gently heat before continuing with the recipe.
