Mascarpone and Tomato Twists

250g quick cook pasta twists
4 x 15ml spoons sundried tomato paste
75g mascarpone cheese
6 fresh basil leaves
Recipe
Cook the pasta in lightly salted boiling water for approximately 5 minutes. Drain, stir through the tomato paste and mascarpone cheese and serve immediately garnished with torn basil leaves. Parmesan shavings can also be used as a garnish.
