Orange-Spinach Pasta

Pass grated Parmesan cheese and crushed red pepper at the table.
2 navel oranges
3/4 bunch scallions
1 cup fat-free half & half (such as Land O Lakes)
12 oz capellini (angel-hair) pasta
2 bags (5 to 6 oz each) baby spinach
Recipe
1. Bring 3 qts lightly salted water to a boil in a large covered pot over high heat.
2. Meanwhile finely grate peel from 1 orange and squeeze juice from both. Slice scallions (should be about 3/4 cup).
3. Bring orange juice and scallions to a simmer in a large nonstick skillet. Cook 3 minutes or until juice is reduced to about 1 Tbsp. Add half-and-half and grated orange peel. Simmer 1 minute, then remove skillet from heat.
4. Stir pasta into pot of boiling water. Cook, stirring often, 3 minutes. Stir in spinach and cook 1 minute more or until pasta is firm-tender. Drain in a colander and return to pot. Add orange sauce and toss to mix and coat.
