Sesame Beef and Pasta Salad

List of Ingredients
500g capellini pasta
1kg beef rump steak, sliced thinly
1 clove garlic, crushed
2 tablespoons sweet chilli sauce
1 tablespoon peanut oil
1 medium yellow capsicum (200g), sliced thinly
1 medium carrot (120g),
sliced thinly
100g trimmed watercress
150g snow peas, trimmed,
sliced thinly
2 teaspoons sesame seeds, toasted
SESAME DRESSING:
1/3 cup (80ml) peanut oil
½ teaspoon sesame oil
1/3 cup (80ml) rice vinegar
2 tablespoons light soy sauce
1 tablespoon lemon juice
1 green onion, sliced thinly
Recipe
Cook pasta in large saucepan of boiling water, uncovered, until just tender; drain. Rinse under cold water; drain.
Meanwhile, make sesame dressing.
Combine beef, garlic and sauce in large bowl. Heat oil in wok or large frying pan; stir-fry beef mixture, in batches, until beef is browned all over and cooked as desired.
Place pasta and beef in large bowl with vegetables and sesame dressing; toss gently to combine. Sprinkle with sesame seeds.
SESAME DRESSING Combine ingredients in screw-topped jar; shake well.
TIPS Watercress, also known as winter rocket, is a slightly peppery, dark-green leaf vegetable. It is highly perishable, so must be used as soon as possible after purchase.
Capellini is a thin, rod-shaped pasta, slightly thicker than angel hair pasta. It can be found at your local supermarket.
