    Tex-Mex Cilantro Pesto with Black Beans

    Pesto
    2 cups firmly packed cilantro
    1 can (4.5 oz) chopped green chilies, not drained
    1/4 cup fresh lime juice
    3 Tbsp olive oil
    3/4 tsp salt
    1/4 tsp pepper
    1 lb wagon wheels or other fancy-shaped pasta
    1 ripe avocado
    1 can (about 16 oz) black beans, rinsed
    1 can (11 oz) Mexicorn (corn and red and green bell peppers), drained
    1/2 cup thinly sliced scallions

    Recipe



    1. Bring a large pot of lightly salted water to a brisk boil.

    2. Meanwhile process Pesto ingredients in food processor until cilantro is finely chopped.

    3. Add pasta to pot and cook as package directs.

    4. While pasta cooks, cut avocado in half, remove pit, peel and cut in cubes. Place in a large bowl. Stir in pesto and remaining ingredients.

    5. Drain pasta; add to bowl. Toss to mix and coat.
