Thai Noodles with Prawns

3 tablespoons Sainsbury’s Red Curry Paste
1 x 410g can Sainsbury’s Light Evaporated Milk
1/2 x Sainsbury’s Fish Stock Cube,made up to 500ml (171/2fl oz)
1 x 20g pack coriander, stems finely chopped, leaves kept whole
1 x 250g pack medium rice noodles
1 x 500g bag Sainsbury’s Chinese Beansprout Stir Fry
250g (9oz) cooked prawns
Recipe
1. Fry the curry paste for 1 minute in a large saucepan.
2. Add the milk, stock and coriander stems. Bring to the boil then add the noodles and beansprout mix. Cover and cook for 3 minutes.
3. Add the prawns and cook for a further minute.
4. Garnish with the coriander leaves. Delicious with a squeeze of lime.
TIPS: Prawns are low in calories and saturated fat. Plus they contain magnesium and zinc, essential for glowing skin and strong nails, and selenium, an important antioxidant.
