List of Ingredients
2 pieces puff pastry
flour to roll out pastry
1 ½ cups ricotta
2 eggs, lightly beaten
1 tablespoon 'Amaretto' brandy, optional
3 tablespoons almonds, roughly chopped
1 teaspoon grated lemon rind
2 tablespoons caster sugar
2 tablespoons currents
½ cup lemon curd (or commercially bought)
Recipe
Preheat oven to 200°C.
Place pastry on a lightly floured surface. Sprinkle with a little flour and, using a rolling pin, roll out thinly. Cut into 10cm square pieces.
Lightly grease a 12 hole standard muffin tin. Place a piece off puff pastry in each hole. Place in oven and cook for 20 minutes. Remove.
In a small bowl combine ricotta, eggs, 'Amaretto', almonds, rind, sugar and currents.
Place 2 teaspoons of lemon curd in each of the tart shells. Top with 1 ½ tablespoons of the ricotta mixture. Bake for 20 minutes, or until puffed and golden
