    1 Sheet ready rolled puff pastry
    30g Western Star Butter, melted
    2 Tsp Sugar
    2 Tsp Ground Cinnamon
    125g Cream Cheese
    2 Tbsp Sugar
    ½ Cup Sour Cream
    1 Tsp Vanilla Essence
    2 Mangoes, peeled, sliced
    Icing sugar, for dusting


    Recipe



    Preheat oven to 200C. Line an oven tray with baking paper.

    Cut the pastry into eight 6cm x 12cm rectangles. Place them on the baking paper, and brush them each with some melted butter, then sprinkle with the sugar and cinnamon. Bake in a preheated oven for 8-10 minutes or until puffed and golden. Set aside to cool.

    Using an electric beater, beat the cream cheese and sugar in a small bowl until smooth. Add the sour cream and vanilla and beat until smooth and thick.

    Cut each pastry in half horizontally. Spoon or pipe some cheese mixture onto each pastry base, then place some sliced mango on top. Top with the other pastry half and dust with icing sugar.
