    2 Cups Plain Flour
    2/3 Cup Icing Sugar
    150g Western Star Butter, softened
    2-3 Tbsp Iced Water
    1 ¼ Cups Fruit Mince (either homemade or bought)
    1 Eggs white, lightly beaten
    Sugar, for dusting


    Recipe



    Preheat the oven to 180C. Lightly grease 2 x 12 cup shallow patty tins.

    Place the flour, sugar, and butter into a food processor. Process until the mixture is fine and crumbly. Add almost all the water and process until the mixture comes together, adding more water if necessary. Place on a lightly floured surface and press together until smooth. Divide the pastry in half and roll out one half until about 5mm thick. Using a round biscuit cutter cut out 24 rounds. Place one into each of the prepared patty tins.

    Spoon in the fruit mince, and then repeat the rolling and cutting process with the other half of the dough, and place on top of the now filled pastry cases. Press the edges together to seal them, brush each top with the egg white and sprinkle with some sugar.

    Place in the oven and bake for 30 minutes or until lightly golden.

    Serve them warm or cold as they are
