    Pineapple Berry Cheese Pie

    1 can (8 oz.) DOLE® Crushed Pineapple, divided
    1 envelope unflavored gelatin
    1 pkg. (8 oz.) cream cheese, softened
    1-1/2 cups DOLE Fresh Frozen Strawberries or
    Mixed Berries, thawed, divided
    3/4 cup sugar
    1/4 cup plain yogurt or lite sour cream
    1 (8-inch) pre-prepared chocolate or graham cracker crust

    Drain pineapple, reserve 3 tablespoons juice. Soften gelatin in juice. Heat to dissolve (microwave 20 to 30 seconds; stir to mix).


    Add cream cheese, 1cup strawberries, sugar and yogurt to blender or food processor container. Cover; blend until smooth. With blender still running, add dissolved gelatin. With spatula, stir in 1/4 cup pineapple. Pour into piecrust.


    Refrigerate overnight until firm. Garnish with remaining pineapple, sliced strawberries, and mint, if desired.
