    6 regular-size whole-wheat pitas
    ¼ cup shredded part-skim mozzarella cheese
    3 Tbsp grated Parmesan cheese
    1 lb skinless, boneless chicken breasts
    ¼ tsp pepper
    1 tsp vegetable oil, preferably canola
    1 bag fat-free complete Caesar salad kit
    8 oz plum tomatoes, chopped

    Recipe



    1. Turn oven to 425°F (no need to preheat). Place pitas on baking sheets, sprinkle with cheeses and bake 6 to 8 minutes until lightly crisped.
    2. Meanwhile season chicken with pepper and heat the oil in a large nonstick skillet over medium heat. Add chicken and sauté 4 minutes on each side, or until cooked through. Slice crosswise in strips.
    3. Toss lettuce and dressing from salad kit (save croutons for another use) with tomatoes. Spoon on pitas; top with strips of chicken.Per 1¼ pitas: 535 cal, 44 g pro, 67 g car, 9 g fiber, 10 g fat (3 g saturated fat), 81 mg chol, 1,060 mg sod
