    Lots of veggies and a sprinkling of feta cheese top this easy-bake pizza. Serve with mixed greens and sliced tomatoes tossed with a little balsamic vinegar; fruit sorbet for dessert.

    List of Ingredients




    - - Several leaves fresh basil, optional
    2 - small, firm zucchini
    1 - small red onion
    1 tbsp. olive oil
    1 - jar roasted red peppers (7 oz.), drained and sliced
    1 - thin-crust prebaked pizza shell
    3 oz. crumbled feta cheese

    Recipe



    1 Slice zucchini into very thin rounds. Spread out on a paper towel, sprinkle with salt and set aside for 15 minutes. Slice onion into very thin rounds. Break apart into rings and toss in a bowl with oil, pepper and a little liquid from the jar of peppers; set aside for 15 minutes.
    2 Preheat oven to 400 degrees F. Spread the onions over the pizza shell. Squeeze excess moisture from zucchini and spread over onions. Top with red pepper slices. Sprinkle with cheese.
    3 Bake in hot oven until cheese melts and vegetables are cooked, about 10 minutes. Remove pizza from oven; distribute fresh basil leaves on top, if desired
