Recipe Introduction
Oh-so-sweet Vidalia onions make tonight's pizza deliciously good. Serve with mixed greens tossed with a little balsamic vinegar; sliced cantaloupe.
List of Ingredients
1 tsp. olive oil
2 - large sweet onions, such as Vidalia, sliced
1/4 cup sun-dried tomatoes (not packed in oil), cut into slivers
1 tsp. chopped fresh rosemary or 1/2 tsp. dried
1 - thin-crust prebaked pizza shell
1/2 cup grated part-skim mozzarella or mozzarella-style soy cheese
Recipe
1 Preheat oven to 400 degrees F. Heat olive oil in a heavy-bottomed sauté pan over medium heat. Add onions and cook until soft and beginning to brown, about 10 minutes. Stir in tomatoes, rosemary, salt and pepper. Splash with 2 tbsp. water. Cook until liquid evaporates.
2 Spread onion mixture on pizza shell. Sprinkle with cheese.
3 Bake in hot oven until cheese melts, about 7 minutes.
