Spinach, Tomato and Mushroom Pita Pizza

One whole-wheat pita pocket (2.25 ounces)
2 ounces part-skim mozzarella cheese
1/4 cup marinara sauce
1/2 cup sliced fresh mushrooms, tomatoes or your child's favorite vegetable
1/2 cup chopped spinach, arugula or basilRecipe
Preheat oven or toaster oven to 400F. Spread the marinara sauce evenly over topside of the pita. Sprinkle the cheese evenly over the sauce. Place sliced vegetables on top of the cheese, evenly spaced. Bake until cheese is melted, about 3 minutes. Slice in quarters. Serves two.
