Pea and Potato Curry

List of Ingredients
2tbsp vegetable oil
500g diced potato
250g peas
1 large onion (diced)
1/2tsp cumin seed
1/2tsp mustard seed
1/2 bnch coriander
1tsp fresh ginger (grated)
1tsp turmeric
1/2tsp chilli powder
1tsp garam masala
Juice of 1 lemon
1/4 cup hot water/vegetable stock
150g Western Star Butter
Salt and pepper to taste
Recipe
Wash diced potato and dry thoroughly.
In vegetable oil, gently fry cumin and mustard seed until brown.
Add onion, season with salt and pepper and fry until coloured.
Add herbs, ginger, turmeric, chilli and continue frying, stirring constantly.
Once well mixed, add potato and peas and season with salt and pepper.
Add hot stock and reduce heat to low.
Add butter and cover saucepan tightly, shaking occasionally.
Cook for approx 20min, or until potatoes are done.
Finish with garam masala and lemon juice.
Serve on piping hot rice with natural yoghurt atop.
