    Sauce:
    1 tsp olive oil
    1 lb sweet or hot Italian turkey sausage, removed from casing
    1 cup chopped onion
    1 jar (26 oz) marinara sauce

    1 tub (15 oz) part-skim ricotta cheese (about 13/4 cups)
    1/4 cup plus 2 Tbsp grated Parmesan cheese
    1 large egg
    3 lb (about 6 medium) baking potatoes, peeled and submerged in a bowl of cold water to prevent browning
    4 oz each Cheddar cheese and part-skim mozzarella cheese, shredded and mixed

    Recipe



    1. Heat oven to 350°F. Have a 13- x 9-in. baking dish ready.

    2. Sauce: Heat oil in a large nonstick skillet over medium-high heat. Stir in sausage and onion. Cook, breaking up chunks of sausage with a spoon, 5 to 6 minutes until sausage is browned and onion is translucent. Stir in marinara sauce. Reduce heat and simmer 8 to 10 minutes until slightly thickened.

    3. Meanwhile mix ricotta, the 1/4 cup Parmesan and the egg in a medium bowl .

    4. Spread 1 cup Sauce over bottom of ungreased baking dish.

    5. Pat dry and thinly slice 2 potatoes. Place a layer, overlapping evenly, in baking dish. Spread with 1 cup sauce. Spoon on half the ricotta mixture, then sprinkle with 1/3 the Cheddar mixture. Repeat layers once, starting with 2 potatoes and ending with half the remaining Cheddar mixture.

    6. Top with final layers of 2 sliced potatoes, the remaining sauce, Cheddar mixture and the 2 Tbsp Parmesan cheese.

    7. Lightly coat a sheet of foil with nonstick spray. Place coated side down on lasagna; press edges to cover tightly.

    8. Bake 1 1/4 hours or until layers can be easily be pierced through the foil with tip of a knife. Remove foil; bake 15 minutes longer. Let stand at room temperature 10 minutes before serving.
