Potato and Corn Patties

List of Ingredients
1kg potatoes, peeled and grated (white sweet or white)
1/2 cup plain flour
2 tablespoons fresh parsley, chopped
2 tablespoons fresh coriander, chopped
300g can of corn, drained
2 tablespoons Perfect Italiano grated parmesan cheese
2 eggs lightly beaten
3 green onions, chopped
Oil for shallow frying
Recipe
Combine potato, flour, corn, eggs, onion, parsley, coriander, parmesan cheese and seasonings to taste. Mix well.
Heat oil in frying pan. Put a handful (2-3 tablespoons worth) of potato mixture in the pan and flatten slightly with a spatula.
Cook for 3 to 4 minutes each side, or until golden. Drain excess oil off patties. Continue with remaining mixture.
Serve with sweet chilli sauce, or salsa, or on a bun as a burger
