    Serve this hearty pilaf as a meal in itself or as an accompaniment to grilled kebabs.

    List of Ingredients




    - - No-stick cooking spray
    1 - medium yellow onion, diced
    2 - medium carrots, diced
    1 - stalk celery, tough strings removed, diced
    2 cloves garlic, minced
    1 1/2 teaspoons curry powder
    1/4 teaspoon cayenne pepper, or to taste
    1 teaspoon sea salt
    1 cup (7 oz/210 g) white basmati rice
    1/2 cup (4 oz/120 g) red lentils
    2 1/2 cups (20 fl oz/600 ml) water
    1 cup (5 oz/150 g) shelled edamame (frozen green baby soybeans)
    2 tablespoons chopped fresh cilantro

    Recipe



    1 Spray a large saucepan with cooking spray and set over medium heat. Add onions, carrots, celery and garlic. Cook, stirring, for 5 minutes.
    2 Add curry powder, cayenne and salt. Stir to coat the vegetables. Add rice and lentils and continue cooking for 2 minutes more.
    3 Add water to the saucepan and bring to a boil. Reduce the heat to low, cover the pan and simmer for 20 minutes. Remove from the heat and let stand 10 minutes.
    4 Meanwhile, bring a small saucepan of water to a boil and cook edamame until tender, about 5 minutes. Drain and set aside.
    5 Transfer the pilaf to a serving bowl and gently toss with edamame and cilantro. Serve warm.
