    Serve with oven-toasted flour tortillas

    List of Ingredients




    8 oz ground beef round
    1 cup chopped onion
    1 Tbsp chili powder
    1 tsp each ground cumin and garlic salt
    1 cup raw white rice
    1 can (15 1/2 oz) corn, rinsed
    1 can (15 oz) tomato sauce
    2 small zucchini, diced (23/4 cups)

    Recipe



    . Cook beef, onion, chili powder, cumin and garlic salt in a large nonstick skillet 4 to 5 minutes until browned, breaking up clumps of meat with a wooden spoon.

    2. Stir in rice and 11/2 cups water. Bring to a boil, reduce heat, cover and simmer 10 to 12 minutes until rice is almost tender.

    3. Stir in corn, tomato sauce and zucchini. Cover and simmer 8 minutes more or until rice and zucchini are tender.
