    Tomato rice bake

    List of Ingredients




    6 bacon rashers, chopped
    3 medium tomatoes, seeded, finely chopped
    1 x 250g packet grated tasty cheese
    1 cup stale breadcrumbs
    2 tablespoons finely chopped fresh parsley
    Salt and pepper, to taste
    3 cups cooked white rice
    Salad, to serve

    Recipe



    1. Lightly grease an ovenproof dish (8-cup capacity).

    2. Combine bacon, tomatoes, cheese, breadcrumbs and parsley in a large bowl. Season with salt and pepper; mix well.

    3. Place half the cooked rice over base of dish; top with half the tomato mixture. Repeat with remaining rice and tomato mixtures.

    4. Cook, uncovered, in a hot oven, 200C, for 35 minutes. Stand for 5 minutes before serving. Serve with a salad.
