    1 can (13.5 ounces) unsweetened coconut milk
    2 to 3 cups water plus 2 tablespoons
    1 stalk lemongrass, white part only, split lengthwise
    1 tablespoon granulated sugar
    1 teaspoon salt
    1 cup jasmine rice, rinsed
    ¼ cup toasted shredded coconut, for garnish (optional)

    Recipe



    1. In a 4-quart saucepan, combine the coconut milk, water, lemongrass, sugar, and salt. Bring to a boil, add the rice, and reduce heat to low.

    2. Cover saucepan halfway and gently simmer for 25 minutes. Cover completely, and remove from heat, let stand 7 minutes more.

    3. Discard lemongrass, and fluff rice with a fork. Transfer to a serving bowl, and garnish with toasted coconut, if desired.
