Asian Chicken and Cabbage Slaw

List of Ingredients
1/2 teaspoon grated lime peel
3 tablespoons fresh lime juice
3 tablespoons Thai fish sauce (nam pla)
3 tablespoons vegetable oil
2 tablespoons finely chopped jalapeno chili pepper
1 tablespoon rice wine vinegar
4 teaspoons minced garlic
1/4 teaspoon freshly ground black pepper
2 pounds prepared roast chicken, boned, skinned and shredded
1 16-ounce package shredded cabbage with carrot (coleslaw mix)
1/2 cup thinly sliced green onions
1/2 cup thinly sliced fresh mint leaves

Recipe
1.For dressing, in small bowl, stir together lime peel, lime juice, fish sauce, oil, chili pepper, vinegar, garlic and black pepper.
2. In large bowl, toss chicken with 1/4 cup of the dressing; let stand 5 minutes.
3. In another large bowl, toss coleslaw mix, green onions, mint and remaining dressing. Add chicken and toss to coat. Serve with sesame crackers. Makes 4 servings.
