List of Ingredients
5 eggs hard-boiled, shelled and halved
1 large mango peeled, seeded and sliced
500g prawns cooked and shelled
1 lettuce broken and washed
1 avocado peeled, seeded and sliced
Dressing:
1 cup mayonnaise
½ cup sour cream
2 tablespoons curry powder
½ cup chopped peanuts
Recipe
Combine dressing ingredients except for peanuts and let stand.
Arrange on a serving platter the lettuce leaves, mango and avocado slices, eggs and prawns.
Pour over dressing and sprinkle with peanuts.
