    BLT Lentil Salad

    This warm salad makes a hearty lunch, or serve it with pork chops for dinner.

    Cook 2 chopped slices bacon and 1 cup chopped onion in a large saucepan until bacon is crisp and onion slightly brown.

    Remove, drain and set aside.

    Put 1 cup rinsed, sorted lentils in a large saucepan with 2 1/2 cups water and 1/2 tsp each dried thyme and salt.

    Bring to a boil, reduce heat, cover and simmer 15 minutes or until lentils are just tender and the water is almost absorbed.

    Add 1 drained 14 1/2-oz can stewed tomatoes and cook until heated through.

    Stir in bacon and onions. Sprinkle with a little red-wine vinegar.

    Serve hot or warm on lettuce.
