Chicken Salad with Spicy Peanut Dressing

List of Ingredients
250 ml (1 cup) cooked julienned chicken

4 large lettuce leaves

Parsley, lemon and tomato for garnish

250 ml (1 cup) peanut dressing

Peanut dressing
--------------------------------------------------------------------------------
250 ml (1 cup) peanut butter
--------------------------------------------------------------------------------
250 ml (1 cup) chicken broth
--------------------------------------------------------------------------------
2 shallots or green onions, finely chopped
--------------------------------------------------------------------------------
2 tbsp. strong sesame oil
--------------------------------------------------------------------------------
6 tbsp. soya sauce
--------------------------------------------------------------------------------
1 clove of garlic, minced
--------------------------------------------------------------------------------
Salt and pepper Recipe
Place all of the dressing ingredients except the shallots into a saucepan;
bring to a boil; mix well until the peanut butter has dissolved;
let cool. Add the shallots; correct the seasoning;
place a lettuce leaf on each plate; place the chicken on top; drizzle with dressing; garnish and serve
