    Chicken and Cannellini Bean Salad

    List of Ingredients




    1 x pack 2 ready-roasted chicken breasts (or 2 raw breasts)
    1 x 410g tin cannellini beans, drained and rinsed
    zest and juice 1 lemon
    150g pack chorizo or Polish kabanos sausages
    15ml spoon sunblush tomatoes, roughly chopped
    3-4 x 15ml spoons extra virgin olive oil
    1 x 20g pack fresh flat-leaf parsley, chopped
    salt and freshly ground black pepper

    Remove the skin from the chicken, cut into bite-sized pieces and place in a bowl with the cannellini beans and lemon zest. Alternatively grill 2 breasts from raw.
    Slice the chorizo or kabanos on the diagonal, and add to the bowl along with the sunblush tomatoes.
    Whisk together the lemon juice, olive oil and seasoning. Pour the dressing into the bowl, scatter over the chopped parsley and mix together. Set aside for 10 minutes to allow the flavours to infuse.
    Serve with crusty bread and a green salad.
