    Dressing:
    1/4 cup vegetable oil
    2 Tbsp each sugar and cider vinegar
    1 Tbsp soy sauce
    1 tsp grated fresh ginger or 1/2 tsp ground ginger
    1/4 tsp each salt and pepper

    1 head romaine lettuce (about 1 1/4 lb), cut in bite-size pieces (about 8 lightly packed cups)
    3 cups (about 12 oz) large shreds cooked chicken
    1 cup chow mein noodles
    1/2 cup chopped cashew nuts
    1/4 cup toasted sesame seeds (see Note)
    2 scallions, sliced

    Recipe



    1. Whisk Dressing ingredients in a large bowl until blended.

    2. Add remaining ingredients and toss to mix and coat.

    Note:
    To toast sesame seeds: Place seeds in a small skillet over medium heat and stir often until golden brown. (Keep a close watch. Because of the seeds' high oil content, they brown quite quickly.)
