Cool Cucumber-Tomato Salad

Ingredients:
4 vine-ripened tomatoes, seeds removed, chopped
1 seedless cucumber, peeled and chopped
4 scallions, thinly sliced
1/4 cup finely chopped Italian parsley
1 1/2 tablespoons freshly squeezed lemon juice
1 1/2 tablespoons freshly squeezed lime juice
2 tablespoons olive oil Recipe
Toss together all ingredients; season with salt and pepper. Serve as a salad with toasted pita wedges or as a salsa with grilled chicken or fish.
