    Boston lettuce is very delicate. This light Shallot Vinaigrette is just the right dressing for these leaves

    List of Ingredients




    2 large heads Boston lettuce, rinsed and dried, tough outer leaves discarded
    2 large shallots, peeled and finely diced
    3/4 cup small, whole flat-leaf parsley leaves
    Coarse salt and freshly ground black pepper, to taste
    1/4 cup Shallot Vinaigrette (see recipe below)

    Place the lettuce leaves in a large salad bowl. Toss with the shallots and the parsley. Season with salt and pepper. Lightly toss with the Shallot Vinaigrette. Serve from the bowl or divide among 8 salad plates.

    Serves 8. Per serving: 60 calories, 4g carbohydrate, 2g protein, 5g fat, no cholesterol.


    Shallot Vinaigrette

    1/2 cup cider vinegar
    1 tablespoon minced shallots
    1 teaspoon Dijon mustard
    1 teaspoon sugar
    Salt and freshly ground black pepper, to taste
    1/2 cup olive oil

    In a small bowl, whisk together the cider vinegar, shallots, mustard, sugar, salt and pepper. Slowly drizzle in the oil, whisking constantly until thickened. Adjust seasonings to taste.
