    List of Ingredients




    Dressing:
    1 cup light mayonnaise
    1/2 cup reduced-fat sour cream
    2 Tbsp each minced red onion and water
    2 tsp each cider vinegar, horseradish and sugar
    1/4 tsp each salt and pepper

    Salad:
    2 bags (6 oz each) baby spinach leaves
    1 small red bell pepper, diced (1 cup)
    6 oz fresh mushrooms, sliced (2 1/2 cups)
    1 small yellow bell pepper, diced (1 cup)
    1 pt cherry tomatoes, cut in half (2 cups)
    1 cup frozen petite peas, thawed
    4 large hard-cooked eggs, coarsely chopped
    4 strips bacon, cooked crisp, crumbled

    Recipe



    1. Have ready a 4- to 5-qt serving bowl, preferably clear glass or plastic (so the layers are visible).

    2. Stir Dressing ingredients in a medium bowl until blended.

    3. Layer Salad ingredients in bowl in order given, placing tomatoes cut sides up. Spread dressing over the top.

    4. To serve: Sprinkle with bacon. Spoon through the layers or toss salad to mix.
