    Ranch Cucumber-Rice Salad

    List of Ingredients




    1-1/2 cups MINUTE Brown Rice, uncooked
    1-1/3 cups water
    1/2 cup KRAFT LIGHT DONE RIGHT Cucumber Ranch Reduced Fat Dressing
    2 Tbsp. chopped fresh mint leaves or 1 tsp. dried mint leaves
    2 medium cucumbers, chopped (about 4 cups)
    10 cherry tomatoes, quartered

    COOK rice in water as directed on package; cool.
    TOSS rice with dressing and mint in medium bowl. Add cucumbers and tomatoes; stir gently. Cover.
    REFRIGERATE at least 2 hours or until chilled.

    Make-Ahead: Rice can be cooked ahead of time. Store in tightly covered container in refrigerator up to 3 days. Toss with remaining ingredients just before serving
