Raw Salmon With Soy, Ginger, and Shallot

2 ounces salmon, thinly sliced
1 shallot, peeled and finely chopped
1 tablespoon pickled ginger, finely chopped
1 ounce goat cheese, broken up
Small handful of arugula

Recipe
Fresh ginger is sliced finely, blanched, and refreshed three times or enough to take heat out of ginger. Young ginger may require more. Put into a sugar and vinegar syrup made with 3 ¼ cups water, 1 ½ cups sugar, and 2 tbsp. white wine vinegar or to taste.
Ginger and shallot dressing
Combine shallot and pickled ginger with 1 tbsp. soy and ¼ cup olive oil.
Place thinly sliced salmon on plate with the goat cheese and arugula salad at the top of the plate. Season salmon with salt and add dressing before serving.
