Salade Nouvelle Niçoise

6 oz. thin green beans (haricots verts), trimmed
1 - red onion, thinly sliced
2 tbsp. orange juice concentrate
1/4 cup red wine vinegar
2 - 3 - handfuls arugula or other dark greens, washed
5 oz. herb-flavored smoked pressed tofu, crumbled
12 - 16 - tiny Niçoise olives or other imported olives
Recipe
1 Cook green beans briefly in a saucepan of boiling salted water. Drain and refresh under cold water.
2 In a small bowl, combine onion slices, orange juice concentrate and vinegar. Add salt and a liberal grinding of black pepper. Set aside to marinate for 10 minutes.
3 Divide arugula over 2 - 3 dinner plates. Top with green beans, onions (leaving orange vinaigrette in bowl), tofu and olives. Pour orange vinaigrette over all.
