Simon’s Favorite New England Salad

List of Ingredients
For the mustard-maple vinaigrette:
3 tablespoons balsamic vinegar
1 tablespoon real maple syrup
1 teaspoon Dijon mustard
1/2 cup olive oil
Salt and freshly ground black pepper
For the salad
4 to 6 cups seasonal greens
About 20 sugar snap peas
2/3 cup fresh blueberries
2/3 cup dried cranberries
2/3 cup toasted walnuts
2/3 cup crumbled local goat cheese
Recipe
For the dressing, whisk together the vinegar, maple syrup, and mustard. Whisk in the oil and season with salt and pepper to taste.
Spread greens on a platter or individual plates. Top with sugar snaps, berries, walnuts, and cheese, drizzle with vinaigrette, and serve.
