Snow Pea and Chili Salad With Almonds

14 ounces snow peas
1 small red chili, scraped of seeds and finely chopped
¼ cup slivered almonds, toasted
Bunch coriander, roughly chopped
Dressing
2 tablespoons hoisin sauce
2 tablespoons red wine vinegar
Extra virgin olive oil
Sea salt and freshly ground pepper
Recipe
Top, tail, and de-string the snow peas. Blanch in boiling water for about 15 seconds then drop into iced water. Drain and combine with the chili, almonds, and coriander. Toss with the dressing and serve.
Dressing
Whisk together the hoisin sauce, vinegar, and olive oil. Season to taste
